  • For 4 people :
  • 1 chicken
  • 1 lemon juice

  • pepper.
  • Raita :
  • 1 cucumber
  • 1 yoghurt
  • 1 clove of garlic
  • 1 lemon juice
  • 1 bouquet of mint.


Cut the chicken, remove the skin, and cut each piece three times. Mix chilli and lemon. Add salt. Cover the chicken and let stand for 30 minutes. Mix marinade, cover chicken, keep 12 hours cool • Preheat oven to 180 ° C (tea 7). Place the whole in a dish. Heat 3 tbsp. of water, add the saffron and then the butter. Pour over the chicken. Bake for 1 hour, drizzling with sauce while cooking. The raita: peel, grate and salt the cucumber. Mix yogurt, lemon, crushed garlic and chopped mint. When serving, add the cucumber. Serve chicken and raita with saffron rice with cashews.
